Yesterday, I started Raw Food Magazine's 21 Day Raw Food Reset.
Day 1 started out okay - the breakfast smoothie and chia pudding snack were delicious, but when I hit lunch time and had to eat a couple leaves of swiss chard filled with tomatoes and onions I hit a low point. I'm not a big fan of raw tomatoes.
Then I came home to the smell of ribs that had been slowly cooking in the crockpot all day (this is what my spouse made for dinner...and ribs are one of my all time favorite foods...), but I had to make raw zucchini noodles ("zoodles"). That was tough. But zoodles with homemade raw marinara are actually pretty good.

I went to bed feeling a bit discouraged, because these meals have taken a fair amount of prep time. Time that I don't have with a 1 year old. But when I woke up this morning with tons of energy, seeing that the last bit of eczema on my hand is healing up, my head is feeling a little better (I think I got a minor concussion on my flight to Hawaii last month), I lost 1 lb., and my blood sugars are coming down into normal range, I was re-inspired and re-energized to do this thing.
Also, it was so nice that all the prep work I put in last night allowed me to run out the door with a wonderful breakfast, lunch, and two snacks to enjoy today.
Onto Day 2...!
